The garlic sauce usually accompanies fried fish (mainly cod), fried vegetables (mainly aubergines and courgettes, or boiled vegetables (mainly beets). Sometimes used as a cookie.

Fried vegetables with tomato sauce

fried eggplant, peppers and zucchini, topped with a tomato sauce, garlic and oregano.

MATERIALS

* 3-4 argitikes or flasks eggplants
* 4-5 medium zucchini
* 7-8 horns peppers
* 4-5 ripe tomatoes or 1 canned chopped tomatoes
* 4-5 clove
* salt
* oregano
* olive oil

EXECUTION

1. Wash vegetables.
2. Slice the aubergines and put them in saline half an hour to get the bitterness.
3. Cut the zucchini into long slices.
4. Sweep and plot peppers.
