A ready choice for winter and summer. Serve with roasted nuts, sour apple and fresh parsley for complete enjoyment. For the more adventurous, wrap it in a sheet of crust and accompany it with Pitenis yogurt sauce.

Quail with rice

MATERIALS

* 8 quail,
* 1 large onion, chopped
* 1 tablespoon dried basil
* 1 teaspoon grated nutmeg
* 1 canned chopped tomatoes
* 2 cups rice makrykoko
* Salt
* Pepper
* 1 teaspoon tomato paste
* 1/2 teaspoon sugar
* Half cup of oil
* 2 tablespoons butter

EXECUTION

Wash the quail and leave to dry in a colander. Saute the onion with olive oil. Place the quails into the pot along with spices and bring to a boil. Add the tomatoes and tomato paste and salt and pepper. Close the pot and boil for 45 minutes. Prepare the rice and saute with butter. Serve the birds onto the platter with rice and pour the sauce.
